Cream Of Cauliflower Soup

Ingredients
1 900ml carton (4 cups) reduced sodium chicken stock1 400 ml (14 fl oz or 1 3/4 cup) fat free evaporated milk1 medium onion, chopped2 small heads of cauliflowerseasonings to taste
Directions
Sautee the onion with a clove of garlic in a pot sprayed with nonstick cooking spray.
Add the chicken broth and the milk. Add the cauliflower that has been roughly chopped. Bring to a boil, reduce heat and simmer until the cauliflower is soft. Puree using an immersion blender of food processor. Season with whatever spices you'd like.
