Black-eyed Pea Gumbo

Ingredients
Olive Oil, 1 tbsp Onions, raw, .5 medium (2-1/2" dia) Green Peppers (bell peppers), 0.5 cup, chopped Celery, raw, 2 stalk, medium (7-1/2" - 8" long) Low sodium broth, 2 cup Brown Rice, medium grain, .5 cup Black-eyed peas (cowpeas), immature seeds, cooked, boiled, drained, without salt, 4 Cup Canned Tomatoes, 1 can Green Chiles, chopped 4 oz 1/2 tsp Red pepper flakes
Directions
Heat oil in large sauce pan over medium heat. Cook onion, peper, celery in oil until tender. Pour in broth and add the rice, black-eyed peas, tomatoes, green chiles, and garlic. Bring to boil and reduce heat to low. Simmer 45 minutes or until the rice is tender. Add water if it becomes too thick.
