Herb Crusted Eye of Round Beef Roast

3 lb eye of round beef roast 1/8 cup canola oil5 cloves garlic1 Tbsp parsley1 tsp oregano1 tsp thyme1 tsp rosemary1/2 tsp salt2 Tbsp mustard powder
Preheat oven to 350 degrees. In a small bowl stir together canola oil, garlic, parsley, oregano, thyme, rosemary, and salt. Rub mixture evenly over roast. Roast in oven until meat thermometer indicates desired level of doneness. (Approximately 45 minutes for medium-rare). Serves 8.
