French fry substitute

Ingredients
one pad of cactus (also called Nopales in the store)your favorite butter spray (like Pam)your favorite seasoning if salt and pepper is too mild.
Directions
Preheat oven to 350 F.

Spray cookie sheet once with butter spray.

Rinse cactus pad. Using a "carrot peeling" motion, remove the needles of the cactus with a knife. It works best with the knife blade facing down. Make sure to remove all of the needles and most of the black nobs on the pad.

Slice the cactus in lengthwise strips or in a size you desire.

place strips on the cookie sheet and spray top of cactus with one spray of butter.

Season to taste with pepper, salt, or other seasoning (I personally enjoy creole seasoning or green chile powder).

Bake for 6-10 minutes depending on the thickness and size of the strips. When the cactus just starts to shrivel is when I think it is best. But certainly try different cooking times to find the texture you enjoy the most.

One medium pad is enough for one person. A large pad could possibly satisfy 2.
