Vegan Black Eyed Peas (Low-Sodium)

Ingredients

1lb bag dry black eyed peas 1 cup diced raw celery1 cup diced raw onion1tsp Kosher salt1 tsp black pepper6 cups water
Pick through beans & rinse with cold water.
Add beans to stock pot & cover with water
Bring to a boil
Add celery, onion, salt & pepper & stir
Bring to a boil again
Reduce heat & simmer for 45-50 minutes
NOTE: You may need to add water as the beans absorb the liquid in the pot. Stir & check periodically to make sure the beans don't burn. You can add more water (1 cup at a time) until beans are tender
