Strawberry Ricotta cheese cake (losingjess)

Ingredients
1 16-oz container part skim ricotta1/2 cup reduced fat sour cream4 oz reduced fat cream cheese3 large eggs3/4 cup splenda1/4 cup all purpose flour1 tsp vanilla extract1 tsp lemon zest1/4 tsp salt- Topping -2 cups frozen strawberries1 tbls lemon juice1 tbls honey 1 tsp unflavored geletin1 tbls warm water
Directions
Preheat oven to 325*

Coat a 9 inch spring form pan with cooking spray

place ricotta, sour cream, cream cheese, eggs, splenda, flour, vanilla, lemon zest and salt into food processor and blend untill smooth.

Pour into pan and bake 55 - 60 minutes ....... remove from oven and chill for 3 hours.

Topping

place berries, honey, and lemon juice in pan and bring to a boil. Remove from heat. Desolve gelatin and water in a small bowl and then mix into berries. Chill for 3 hours in fridge. Top cheese cake with berries and serve or keep in fridge for up to 3 days.
