Roasted Vegetable Pita Sandwich Filling

Ingredients
3 small zucchini1 c grape tomatoes4 oz broccoli1 sweet red pepper8 oz portabella mushrooms1 medium onion2 tbs olive oil1 tbs chopped garlic
Directions
Slice zucchini, sweet red pepper, onions and mushrooms. Broccoli should be in small pieces and tomatoes are left whole. Place the veggies on a baking sheet and drizzle with oil. Sprinkle with garlic. Bake in a preheated 425 degree oven for 15 minutes.
