twice baked potato

Ingredients
1 small to medium baking potatoe1 strip of turkey bacon1 tablespoon of green onion1 oz of reduced fat Chedar cheese or substitute1 dollop of non fat or reduced fat sour creamOptional steamed vegetable like brocolli or spinach
Directions
Makes 1 serving

Preheat broiler

Poke the potato with fork, pop in the microwave and cook on the potato setting. Remove potato from Microwave. Let cool for about 5 minutes, scoop out flesh, keep the skin.

Put potato pulp in a bowl, add your sliced green onion, cooked turkey bacon and sour cream; mix together. Scoop mixture back into the potato skins. Sprinkle the top with cheese, pop in the oven or toaster oven for a few minutes until the cheese is melted.
