Easy Breakfast quesadillas

4 eggs1 cup substitute6 whole wheat tortillas (8in)1 cup (4 oz) shredded reduced-fat cheddar cheese3 turkey bacon strips, diced and cooked6 tbsp. salsa6 tbsp. fat- free sour cream
1. In a bowl, whisk eggs and egg substitute. Coat large skillet with cooking spray and add egg mixture, stir until set.
2. Heat another large skillet coated with cooking spray and add one tortilla. Top with 1/3 cup egg mixture and one tortilla. Cook over medium heat for 2-3 minutes on each side or until lightly brown.
3. Repeat with remaining tortillas, cheese, bacon and eggs. Cut each quesadilla into six wedges.
Serve with salsa and sour cream (optional)
