Chicken Marengo

Ingredients
Package of boneless, skinless chicken breasts1/3 cup olive oilSalt & Pepper1 medium onion, chopped2 cloves garlic, smashed1/2 lb. sliced mushrooms1 can tomatoes (could use Fire Roasted for added flavor)1/2 cup white wine1/4 cup minced fresh parsley
Directions
Heat the oil in a large, heavy skillet over medium heat. Dry the chicken breasts and sprinkle with salt and fresh-ground pepper. Brown well in the oil on both sides, remove to plate and keep warm. NOTE: Chicken will not be cooked through. Add the onions, garlic and mushrooms to the pan and saute over medium heat for about 10-15 minutes. Add tomatoes and wine, and return the chicken to the pan. Cover and simmer for 20-30 minutes. Serve over rice or noodles.
