Apple Slaw

Ingredients
Mix one bag of cole slaw mix with 2 cored, peeled and diced apples (that have been tossed with 1/2 juice of a lemon to stop them from turning color) and 4 chopped scallions (or green onions) in Large bowl. Mix the dressing and shake well- 3 Tbls sugar, 1/4 tsp salt, 1/4 tsp apple pie spice, 3 tbls. cider vinegar, 2 tbls veg oil. Pour the dressing over the slaw and refrigerate for an hour or two. Note: for the apple pie spice use: 1/2 tsp cinnamon, 1/8 tsp cardamon, 1/4 tsp nutmeg, and 1/8 tsp allspice (reserve the rest for future use)
Directions
Mix dry ingredients. Mix wet ingredients. Mix together, toss and refrigerate till ready to serve. Serves 8, 2oz servings.
