Ingredients
2 (16 oz ea) bags frozen spinach, thawed1.5 tbsp oil2 onions1 green chili, washed & cut open2 tbsp each minced garlic and ginger4 tomatoes, chopped2 tbsp garam masala2 tsp curry powder1 tsp coriander powder1/2 tsp turmericsalt to taste3/4 cup milk2 tbsp butter
Directions
Heat spinach until thawed, or thaw ahead of time in fridge. Heat oil in large pan, add onion, chili, ginger and garlic. Cook until onion begins to brown. Add tomatoes, garam masala, curry powder, turmeric, and coriander powder, and about 1/2 cup or so of water to cook the tomatoes, about 10 minutes. Then add spinach and 3 cups of water, one at a time, each about 6-7 minutes apart, as spinach cooks. Then add milk , mix well and cook for 6-7 minutes more. Let cool, then blend in batches or process with immersion blender. Add butter, let it melt and mix it in. Makes about 9 cups total, about 13 servings 2/3-cup each.
