Curry Chicken

Ingredients
Chicken Thighs (skin removed)1/2 cup onion (chopped)3 cloves garlic (minced)4 tsp chicken bouillon granules4 cups water2 cups brown rice 2 tsp curry powder1 tsp turmericsalt and pepper to taste
Directions
Preheat oven to 375

Simmer water, bouillon, onion, garlic, curry, and turmeric until onions tender.

Spread rice into the bottom of 9X13 baking dish. Place chicken thighs on top of rice. Pour broth mixture over chicken. Cover with foil and bake for 1 hour 30 minutes. Remove foil for last 5-10 minutes of baking to evaporate excess broth.
