Horesradish Potato Salad

Ingredients
1kg potatoes3/4 cup whole-egg mayonnaise1 Tbl lemon juice1 Tbl horseradish cream1/2 cup flat-leaf parsley1/4 cup chopped chives1 small red onion, thinly sliced1 Tbl salted capers, rinsed and drained
Directions
Place the potatoes in a large saucepan of salted cold water and bring to the boil. Cook for 15 minutes or until tender. Drain and set aside to cool. Halve the potatoes and place in a bowl with the mayonnaise, lemon juice, horeseradish, parsley, chives, onon and capers and toos to combine.
