Low Calorie Banana Bread

1 cup all purpose flour1/2 cup whole wheat or spelt flour1 1/2 t. baking powder1/4 t. baking soda1/4 t. ground cinnamon1 large egg1 c. mashed banana (overripe or frozen work best)3/4 c. Splenda (Great Value sucralose)1/4 c. chunky unsweetened applesauce1 t. finely shredded lemon peel (optional)
Spray some cooking spray on the bottom of an 8x4x2 inch loaf pan and set aside.
Combine the dry ingredients in a medium mixing bowl.
In another bowl, beat the egg and add bananas, Splenda, applesauce, and lemon peel. Add wet mixture all at once into the dry mixture. Stir just until moistened, batter will be lumpy.
Spoon batter into the prepared pan and bake at 350 degrees for 45 to 50 minutes. A toothpick inserted near the center of the loaf should come out clean. Cool for 10 minutes and remove from pan. Wrap and store overnight before slicing (if you can wait that long!) Makes 1 loaf of about 16 servings.
