1 1/2 cups flour2 Tbsp Splenda Brown Sugar1 1/2 tsp baking powder1/2 tsp baking soda1/2 tsp nutmeg1/2 tsp salt1 1/2 cup Banana Nut Crisp Cereal (Kroger Brand)1/2 cup sour cream (light)1/2 cup frozen apple juice concentrate1/3 cup apple sauce1 egg1/2 cup mashed banana (about 1 large)
1. Heat oven to 400 degrees F. Spray muffin cups with nonstick spray or use paper muffin cups (sprayed)
2. In small mixing bowl, stir together flour, brown sugar, baking powder, baking soda, nutmeg and salt. Set aside.
3. In large mixing bowl, combine cereal, sour cream and apple juice concentrate. Let stand 5 minutes or until cereal is softened. Add apple sauce, egg and mashed banana. Beat well. Add flour mixture, stirring only until combined. Divide batter evenly among muffin cups.
4. Bake 20 minutes or until muffins test done with a wooden toothpick. Immediately remove from pan. Serve warm.
