Ingredients
Ingredients (for one pancake)2 tablespoons oat bran1 tablespoon wheat bran1 egg2 tablespoons fat-free fromage blancNotes: Fat-free Fromage blanc is a fat-free cream cheese usually sold in the supermarket in 500g tubs. If you are making 2 pancakes, double up the ingredients, but use just one egg for the two.
Directions
Options:

* Savoury - Add pepper, herbs and garlic if you like.

* Sweet - Add sweetener or diet food flavourings (nuts, chocolate, etc).


Alternative idea:

* You can substitute the 1 tbsp wheat bran for 1 tbsp oat bran to make a pure oat bran pancake.


Method
Mix the ingredients together in a bowl. If the mixture is too stiff, add a couple of teaspoons of skim milk.

Add a couple of drops of light oil to a frying pan. Wipe off the oil with a sheet of paper kitchen towel.

Spread the mixture in the pan.

Cook on a medium heat until the underside is golden and the upper side starts to dry.

Flip the pancake and cook the other side.

    This is a great recipe. I made them into mini pancakes and added some equal sweetener for the sweet version. I also made a savoury version by leaving out the sweetener and adding 1/2 tsp salt, 1/2 tsp onion powder and garlic powder. Mixed in some herbs parlsey, chives etc. Great with cottage cheese - 3/3/11

    I add almond extract and stevia. I eat this pancake with my morning coffee, plain, like a piece of toast... Very good. Nice texture. Careful cooking it though-- burns easily. - 5/30/11

    Excellent!! Looks a lot like the Aunt Jemima kind but tastes better and is more filling. I loved it with sour cream on top. Will continue eating this when in the Consolidation phase. Thanks for a great (detailed) recipe - 11/27/10

    I used this recipe to make some small ones with a touch of garlic in about an inch across which I took to a party with a little smoked salmon on top with a half teaspoon of low fat sour cream. I've also used the recipe to make a breakfast one with lemon and splenda on top. - 3/6/12

    I love making my Dukan version of chicken fajitas with this. I add curry powder/spices to the galette (2-3 small ones out of the mix),then I put strips of spicy chicken and nonfat fromage frais in them and wrap. If I want to be a bit naughty I add some grated cheddar cheese too - delicious! - 12/7/11
