Blueberry Gazpacho

Ingredients
4 cups fresh blueberries1 tbsp ground cinnamon1tbsp sugar1/4 cup water1 apple; cored and chopped4 tbsp lemon juice1 cup orange juice1/2 cup honey2 containers of non-fat yogurt (8oz. each)
Directions
This recipe will make 4 8oz servings.

Combine two cups of blueberries, cinnamon, sugar and water in a sauce pan. Cook over meduim heat, stirring occasionall until the berries start to break down. Remove form heat and let cool.

In a blender, combine the other two cups of blueberries, apple, lemon and orange juice, and honey. Blend until smooth.

Pour into a bowl and add the cooked berry mixture and yogurt. Mix well to combine. Cover and chill.

Serve in a chilled bowl or cup with a dollop of whipped cream and enjoy!
