Vegetable and Sausage Frittata

2 smoked beef brats (these can be omitted to make it vegetarian, of course)1 large onion1 clove garlicassorted chopped vegetables, such as zucchini, squash, broccoli, bell peppers, cherry tomatoes, etc.a dozen eggs1/4 cup 2% milksalt, pepper, spices to tastecheese, if desired (I usually leave it off to save the calories)
Set your oven on broil.
Cut up brats and chop vegatables into smallish pieces. Mince the garlic.
Brown brats in an oven-safe frying pan. Add onion and garlic and saute with the sausage until cooked. Add vegetables (in whatever order for them to get done, for example, put in peppers first, then broccoli, then zucchini/squash, and tomatoes at the very end) and cook until they're somewhat done. You can cover or uncover the pan, whichever you think best. I usually cover it a bit for the harder-to-cook stuff like broccoli.
Beat eggs with the milk, adding salt, pepper, and spices to taste (I like cumin, it gives it a nice smoky flavor) in a medium bowl.
When vegetables are looking still looking fresh (bright colors) but somewhat cooked, dump the eggs in the pan, stirring everything around to coat the bottom of the pan with eggs and get everything nicely mixed together.
Let cook for 3-4 minutes on the stovetop, then put the whole kit and caboodle into the oven to broil for ~10 minutes (checking for browning).
When the frittata is done, it will be brown on top and cooked through. Be very careful taking the hot frying pan out of the oven.
You can sprinkle some cheese on to brown right before you take it out, if you want. I find it tastes fine without the cheese, though, and it saves some calories. Extra bonus: it's pretty easy to serve if you flip it upside down onto a plate, and putting cheese on the top ends up on the bottom! :P
Slice into eight pieces (like a pizza) and enjoy!
