Barley Salad

Ingredients
1/1 cup uncooked barley1 1/2 tomatoes chopped1 head broccoli. broken into florets1 small onion chopped1yellow bell pepper chopped8 oz bottle Kraft Light Zesty Italian dressing5 cups lettuce torn
Directions
* In small saucepan cook barley in 1 cup of water, boil until water absorbed. Remove from heat and cool completely..

*In sealable container place all veggies and cooled barley. Pour dressing on top. Seal container. Shake until all veggies are coated. Refrigerate for several hours for flavors to marry.

*To serve- Place lettuce on platter, spread out. Carefully pour marinated veggies in a pile in middle of lettuce, be careful not to spread veggies all way to edge.
