1 cup flour1/3 cup unsweetened cocoa10 large egg whites, at room temperature1 1/4 cup sugar1 tsp. cream of tartar1/4 tsp. salt1 oz. semisweet chocolate, grated1 1/2 tsp. vanilla extract
Preheat oven to 350 degrees. Combine cake flour and cocoa in a small bowl. With electric mixer, beat egg whites in a large bowl until foamy. Gradually add in sugar, beating until blended. Add cream of tartar and salt; beat until medium peaks form (3-5 minutes). Gently fold 1/3 of the flour mixture into egg whites until blended; reapeat 2 times. Gently fold in grated chocolate and vanilla. Pour batter into 10-inch tube pan. Bake until cake begns to pull away from sides 35-40 minutes. Invert pan onto bottleneck and cool completely. Unmold onto serving plate.
