Grilled Tomatoes with Mozzarella Cheese

Ingredients
4 Roma tomatoes, cut in half2 oz marinated Mozzarella ( I find the small balls of mozzarella work best)salt and pepper1/2 tsp olive oil
Directions
Lightly squeeze the tomatoes to get rid of the seeds and juice. Spread the tomatoes on a dish and sprinkle with salt, pepper and olive oil. Use your hands to make sure all parts of the tomatoes are coated with the seasonings.

Heat a grill. Put the tomatoes on the grill cut side up. Cook for 7-8 minutes. Place 1/2 oz of Mozzarella on each tomato. If using the mariniated balls of mozzarella use two per tomato. Grill for another 5 minutes, or until the cheese is melted. 1 tomato per serving.
