Tabouli with whole wheat couscous

Ingredients

1 cup whole wheat couscous1 cup chicken stock1 tbsp olive oil1/4 cup lemon juice 5 tbsp chopped italian parsley2 tbsp chopped mint2 tomatoes chopped1 large cucumber, peeled and chopped1 4oz container of goat cheese crumbles
1)Boil stock, remove from heat, stir in couscous. Set aside to cool
2)Chop tomatoes, cucumber, mint and parsley
3)Add oil and lemon juice to couscous, mix well
4)Add tomatoes, cucumber, mint, parsley and goat cheese to couscous, stir to combine
salt and pepper to taste.
Chill in fridge
Makes about 8 - 1 cup servings(depends some on how big your tomatoes and cuke is :))
