Directions
Place olive oil in skillet. Brown fresh asparagus and onion until asparagus is tender. Add hash brown potatoes. Brown until potatoes are slightly crisp or to desired doneness. Beat egg and pour over mixture in skillet. Continue cooking and tossing egg until done.
