Vinegar Potato Salad

2/3 cup red wine vinegar (or other favorite type)1 TBS Extra Virgin Olive Oil2 tsp dry mustard powder (I used the spice oriental type)2 cloves of garlicdash of black pepper (more or less to taste)thyme1/2 tsp caraway seed3 medium potatoes1 stalk celery
This recipe makes three servings. Prep time does not include cooling time.
Combine ingredients through caraway seed and place aside for later.
Cut potatoes in half and boil 12 minutes or until soft but not mushy. Drain potatoes and let cool.
Cut potatoes and celery into small pieces. Mix with dressing. Serve room temperature or chill.
