Ingredients
*Tomatoes, red, ripe, raw, year round average, 4 medium whole (2-3/5" dia) Tomato Paste, 1 can (6 oz)Onions, raw, 1 medium (2-1/2" dia) *beef boullion cube, 2 serving chicken Thigh, 8 thighs skinned Olive Oil, 2 tbsp Thyme, ground, 1 tbsp Curry powder, 1 tbsp salt or season salt to tastePepper, red or cayenne, 1 tsp
Directions
1st in a blender blend together
3 of with tomatoes and 1/2 the onion with 1 c water.
add into the blender the spices and tomatoe paste.
set aside
in a large skillet saute the other half onion, add the blender mixture and cover. turn on low heat for 15 minutes. add meat and let cook for 30 minutes. serve over rice with a vegetable. or serve over fried plantain.
