Italian Chicken Bake

Ingredients
Two fresh tomatoes, diced1/2 oz fresh Basil, chopped2 tbsp Onion, diced finely2 cloves Garlic, minced2 Chicken Breasts (~10 oz), chopped1/4 c crushed Italian Bread Crumbs2 tbsp Grated Parmesan
Directions
Preheat oven to 375.

Layer the ingredients in a loaf pan:

Bottom layer: tomatoes
onion
garlic
basil
chicken
bread crumbs
Parmesan

Place in oven and bake for 45 minutes or until the chicken is done and the Parmesan is well-toasted. Serve over noodles (I liked mine with extra parmesan).

    I made a simple sauce for my whole wheat spag noodles using basil, oregeno, garlic and an 8oz can of tomato sauce. Mixed that into the noodles and put the chicken bake on top...it tasted like chicken parmasan. It was fantastic! - 6/6/10
