Rockin' Rhubarb Chutney

Ingredients
1 cup sugar3/4 cup brown sugar1/2 cup rice vinegar1/4 cup balsamic vinegar3 tbsp grated ginger root3 tbsp garlic powder1 tbsp cumin1/2 tbsp cinnamon1 tsp cloves1/2 tsp curry powder1/2 tsp cayenne pepper3 1/2 lbs (about 10 1/2 cups) diced rhubarb1 large chopped red onion3/4 cup raisins
Directions
Combine sugars, vinegars, ginger, garlic, cumin, cinnamon, cloves, curry and cayenne in a large pot and bring to a simmer.
Add rhubarb, onion and raisins.
Increase heat, and cook 20 minutes - until rhubarb is tender and mixture thickens slightly.
Let cool completely and store in the fridge or freeze.
