Tofu Rice Paper Rolls

Ingredients
- 6 sheets rice paper- 1 medium carrot, sliced lengthways (I used a peeler)- 1 small-ish bunch raw pak choy, chopped roughly into strips- 6 thin strips tofu, pan fried- 2 tsp soy sauce (to coat tofu in pan)- 3 eggs, fried like an omelette
Directions
Slice all veggies the same way. In this case I sliced everything lengthways. Next, whisk your eggs together and put them into a heated frying pan with about a teaspoon or so of oil- fry it like you would an omelette.

Next, you need to wet the rice paper (wet it as you use it!) so it becomes pliable, but don't let it stick to itself or you'll be trying to unstick it for ages! Then, place paper on chopping board, and begin to assemble your tofu, veggies and fried eggs in any order you like.

Then, once you have done that, roll over once, fold in the sides and continue rolling until it is completely rolled and has come together.
