Chicken, Salsa & Black Bean Quesadilla

1- 6 oz. package Tyson Grilled & Ready Chicken Breast Strips (cut into bite-size portions, if desired)1 c. salsa (I used the Wal-Mart brand of Peach Pineapple Chipotle Salsa)1 c. black beans, drained and rinsedapprox. 6 slices of white mushroom3/4 c, fat free shredded cheddar cheese3 tortilla shells (I used fat free ones)
Place chicken, mushroom slices, salsa, and black beans in a large skillet over medium to med.-high heat. Cook just until warmed.
Spray a clean skillet with non-fat cooking spray and place tortilla shells on bottom (I cook 2 at a time.). Place one cup of salsa mixture in each shell and top with 1/4 c. cheese. Fold the shell over and cook approx. 4-5 minutes on each side.
