2 tbsp diced onion1/4 poblano pepper diced small2 Tsps margarineleftover poatoes, roasted, about a cup3 eggs1/4 cup milk1 slice turkey bacon1 oz grana padana, grated
saute onions and peppers for a few monments. Fry the slice of bacon in the same pan. Add potatoes and get them a little hot. Take out the bacon and slice it. If anything is sticking to the bottom of the pan, take it all out and put it into a new nonstick pan. Mix eggs and milk and pour them over the potatoes. (put the egg in when the pan is a bit hot. Then turn the heat down, cover and let it cook until it's pretty well done. Then you can filp it. good luck with that.
Or you can flip it onto a plate and slide it back into the pan to brown up the top for about 2 minutes.
