Black Beans and Yellow Rice

Ingredients
1 5 oz pkg saffron rice mix1 15 oz can black beans3 tbs lime juice1 tsp chili powder1/2 tsp ground cumin2 tbs chopped fresh cilantro, dividedGarnishes: sour cream, sliced green onion
Directions
Cook rice according to package directions; keep warm.

Meanwhile, drain beans, reserving 2 tablespoons liquic. Combine beans, reserved liquid, lime juice, chili powder, and cumin in saucepan. Cook over medium heat until thoroughly heated; stir in 1 tablespoon cilantro. Serve beans over rice, and sprinkle with remaining 1 tablespoon cilantro. Garnish, if desired. Yield: 3 servings.
