Trish's Rice Salad

Ingredients
White rice, olives (black or kalamata), scalions, onions, roasted peppers, lemon juice and olive oil
Directions
Mix all ingredients with chilled cooked white rice. Make dressing (lemon juice and olive oild, salt and pepper) separately, Drizzle rice with dressing, toss, and chill for at least an hour before serving. GREAT for picnics and BBQ.
