Grilled Salmon Steaks with Chive Butter

4 1-inch (6-oz) salmon steaksolive oil8 T. (1 stick) butterdash lemon juice1 t. fresh parsley, minced1 T. fresh chives, mincedsalt and pepper to taste
Salmon
Brush salmon with olive oil. Grill over medium-hot coals on an open grill about 5 to 6 minutes per side. Place a pat of chive butter onto each hot steak to serve.
Chive Butter
Allow stick of butter to soften in a bowl until malleable. With a fork, blend in: a dash of lemon juice, parsley, chives, and salt and pepper to taste.
Form the butter into a 6-inch long log on a sheet of waxed paper. Wrap securely and refrigerate until hardened, Use as needed.
Makes about 12-15 pats of butter.
