Mini Passion Fruit cakes

85 g (3oz) margarine115g caster sugar140g self-raising flour1 medium egg and 1 egg yolkpulp of 2 passion fruits
Preheat oven to 180degrees C /350 degrees Farenheit/Gas Mark 4 and set out 25 truffle of mini muffin cases on a baking tray.
Cream the margarine and sugar in a mixing bowl until pale, by hand or with an electric whisk.
Beat in the egg and extra yolk until pale and fluffy
Stir in the passion fruit pulp (don't be put off by the seeds), then bit by bit, add the flour and mix thoroughly.
Spoon into truffle cases and bake for 15 minutes or until golden at the edges. Cool on a wire rack.
Sprinkle with some icing (powdered) sugar, to decorate, if required
