Apples and Ba Nay Nays Muffins

Ingredients
1 cup soy or rice milk1/4 cup vanilla soy yogurt1 over-ripe banana, mashed well1 tsp. lemon juice2 cups unsweetened, thick applesauce3 tbsp. canola oil3 tbsp. maple syrup1/2 cup brown sugar1/3 cup sugar2 cups whole wheat flour1 cup AP flour1/2 cup wheat bran1/2 cup rolled oats1/2 cup ground almonds4 tsp. baking powder1 tsp. baking soda1/2 tbsp. cinnamon1 tsp. nutmeg1/2 tsp. salt2 medium apples, diced
Directions
Preheat oven to 350 F, and grease 24 regular or 12 jumbo muffin cups (or 12 muffin cups and 1 loaf pan).
Mix soy milk, soy yogurt, banana and lemon juice.
Add applesauce, canola oil, maple syrup and sugars.
Mix dry ingredients in a separate bowl, and add to the wet mixture.
Mix until just combined.
Bake standard muffins for 20 minutes, jumbos 35 minutes and a loaf 45 minutes (will test clean).
