Black and Red Chili

Ingredients
1 bell pepper, choppped1 medium onion, chopped1 garlic clove, chopped1 T. olive oil1 can red kidney beans1 can black beans1 can diced tomatoes2 t. chili powder (or chili powder blend)1 t. cuminSalt and black pepper to taste
Directions
Saute bell pepper, onion and garlic in olive oil until tender, about 5 min. Add both cans of beans, can of tomatoes and spices and simmer for 5 to 10 minutes.

Makes 4 1.5-cup serviings.
