Carrot Pineapple Bread

Ingredients
3 eggs2 c sugar1 c veg oil1 c carrot, finely shredded1 (8oz) can crushed pineapple2 t vanilla 3 c a/p flour1 1/2 t ground cinnamon1 t baking soda 1 t salt
Directions
Preheat the oven to 325F

Beat together the eggs, sugar, oil, carrots, pineapple and vanilla.

Combine all the dry ingredients in a separate bowl, and beat in batches into the egg mixture.

Pour into 2 loaf pans and bake for 60-70 minutes.

*Makes 24 slices - 2 Loaves*
