Pan Glazed Balsamic Chicken

olive oil spray3/4 pound boneless, skinless chicken breasts1/2 cup balsamic vinegar1 tbsp dijon mustard
Heat skillet over med-high heat. Spray with oil. Brown chicken for 3 minutes on each side. Remove from heat. Cover. Let stand for another 3 minutes. Remove chicken to a plate; sprinkle with salt/pepper to taste (optional).
In same skillet, add vinegar and cook on med-high heat until reduced to hald. Add mustard and mix to create a smooth glaze. Cook another minute. Divide chicken onto two plates, and top with the glaze.
Serves 2.
