Pork Fried Rice with Bell Peppers and Lentils

Ingredients
1 tsp canola oil4 oz cooked pork tenderloin, diced1 cup chopped white onion1 bunch chopped green onions2 cups thinly sliced green bell pepper1 cup thinly sliced red bell pepper1 4oz can mushrooms, drained1/4 cup cooked lentils1.5 cups cooked brown rice (I cook both the rice and the lentils in a rice cooker), cooled1 tbsp lite soy sauce1 cup reduced sodium chicken broth1/4 tsp crushed red pepper1/8 tsp ground ginger1/2 tsp garlic powder1/8 tsp black peppersalt to taste
Directions
1. Heat canola oil over medium-high heat in a large skillet.
2. Add white onions, bell peppers, and mushrooms. Cooks, stirring every 10-15 seconds, until onion is translucent and peppers begin to be tender. Stir in the green onions and spices and cook for 2 more minutes, stirring once or twice.
3. Add pork and cook for a few minutes more, or until warmed. Add rice, lentils, chicken broth, and soy sauce. Stir to combine and cook, stirring, until the liquid is absorbed and rice is heated through. Taste and add salt, if desired.
