Baked Stuffed Eggplant

Ingredients
Ingredients:*Parmesean Cheese - Grated, 8 tbspEggplant, fresh, 1 large eggplant, unpeeled Olive Oil, 1 tbsp *Spaghetti/Marinara Sauce (tomato sauce), 0.5 cup Onions, raw, 0.25 cup, sliced thinGarlic, 1 clove mincedBasil, 6 leaves Spinach, frozen, 0.5 cup
Directions
Core eggplant after slicing in half.
Combine pulp with onion and garlic and spinach and sautee in olive oil on skillet. mix with sauce and place back into the eggplant.
Bake at 400 for 25 minutes.
