Baby Bok Choy Minestrone

Ingredients
2 med. onions chopped1 lb. baby bok choy (approx. 3-4 small bulbs)3-4 cloves garlic chopped1T dried or fresh herbs mix of oregano, bay leaves and thyme12 or 28 oz. can of small or large white beans, black beans or kidney beans (depending on your love of beans)28 oz. can of Italian plum tomatoes1/4 c extra virgin olive oil1T basil pesto used as topping per serving (if desired)
Directions
Heat oil; lightly brown onion and garlic; add tomatoes with liquid, breaking up with fork; add herbs, beans and bring to boil; reduce heat simmering 10 mins. Wash baby bok choy and slice in half lengthwise then in 2-inch long segments; add to minestrone mixture, cover and simmer 20 mins. May use small or large white beans also. Add 1T heated basil pesto if desired (not included in nutrition count). Makes about 6-8 servings.
