Quinoa Pilaf

Ingredients
1 cup quinoa, rinsed2 cups water1 cup chopped onion1 cup chopped mushrooms3 cloves minced garlic1 cup frozen peas1 can chickpeas, rinsed2 t olive oilsmall pat of butterblack pepper to taste1 t marjoram
Directions
makes 4 servings

Rinse quinoa until water is clear, let drain. Rinse & drain beans. Saute onions & mushrooms for 3 min then add garlic & stir for 1 min more. Add frozen peas & let simmer for 2 minutes. Add quinoa & beans & water (or broth). Stir, add spices & bring just to boil. Cover and reduce heat to simmer for 15 min. Can serve with parmesan cheese.
