Lentil Soup with Chard

Ingredients
1 pound bag of dried lentils1 large Bunch of Swiss Chard1 large White Onion1 cloves Garlic, mashedSaltPepper1 tsp Cayenne Pepper1 tsp Olive Oil
Directions
Rinse the lentils and cook in water, twice the amount of lentils bring to a boil then simmer for 45 minutes. In a separate soup pot (when lentils are done) saute chopped onion and garlic in a tsp of olive oil (add a bit of water). When the onions are translucent, add the chopped chard. Cook down for a couple of minutes then add the beef broth. Add salt, pepper and cayenne. Then add the cooked lentils. It can be eaten right away or let simmer for another half hour if you have time. Serve alone or over brown riceor pasta.

    OK - but I had to guess on the amount of broth, since its not a listen ingredient. The primary flavor was the cayenne- may try to experiment with a few differnt spices next time. - 1/21/08
