Savannah Salmon Patty

Salmon 14.75 oz. canEgg 1 largeBell Pepper half cup choppedSweet Onion half cup choppedCelery half cup choppedSelf rise flour 1/4 cupOlive Oil 2 tblsp.Salt 1/2-1 tsp.Black Pepper 1/2 tsp.

Chop all veggies as fine or coarse as preferred
Drain salmon into large mixing bowl
Mix all ingredients together. The finer the veggies are chopped the more moist the patties. Divide into 6 portions
Preheat nonstick pan with olive oil on medium heat . Place patties in pan gently. Lower temp to medium low.
Cover with a lid for 15 min. This allows them to "bake". Remove lid, and gently flip them to brown on other side. Do not replace lid. Cook 10 more min. These will be a nice medium brown color and not dry inside. The veggies make them very moist.

This was a nice twist on salmon patties. I added a little dillweed & parsley flakes for a little extra flavor. Next time I will reduce by half the amount of onion, celery & pepper. They were a little overpowering. But definitely a keeper, with a few minor changes! Thanks for sharing! - 10/30/07
