Ingredients
.25 cup light olive oil or canola oil.66 cup dark maple syrup1 tbsp vanilla extract3.5 cup rolled oats.25 cup ground flax seed.25 cup sesame seeds.5 cup unsweetened shredded coconut.5 cup green pumpkin seeds (pepitas).5 cup pecans, chopped.5 cup almonds, slivers, chopped, or sliced
Directions
Preeat oven to 225 degrees F.
In a small saucepan, combine maple syrup and oil and stir to combine,over low heat. Remove from heat and add vanilla extract.
In a large bowl, combine the rest of the ingredients and mix thoroughly. Add the maple mixture and mix well, making sure it coats the oat mixture evenly.
Spread granola on a baking sheet and put in oven for approximately 1 hour 30 minutes (I typically cook it for 2 hours). Stir mixture occasionally (I stir it every 30 minutes).
Either transfer granola mixture to a container and store it, or turn off the oven and leave it in there overnight, so it dries out more (which is my preferred method).
Store in air tight container: it can store for two weeks at room temperature or 2 months if frozen.
Approximately 16 .5 cup servings.
