Asian Salmon Salad

Ingredients
4 oz salmon fillet per person (previously baked in teriyaki marinade or grilled)2 cups shredded or torn Romain lettuce1/2 cup drained canned mandarin oranges in light syrup(or use fresh tangerines or oranges)sliced almonds 2 sliced scallions 1/2 cup peeled cucumber slices2 Tbsp. Newman's Own Low Fat Sesame Ginger Dressing
Directions
Cooking time does not include cooking the fish the day before. Serves one as a main dish salad for lunch or dinner with 4 oz serving of leftover fish and 2 cups lettuce. Paul Newmans brand of asian salad dressing at only 16 calories per tablespoon is much lower than most brands, plus the proceeds go to charity!
If you don't bake your salmon in Soy Vay teriyaki adjust the calories. (Could substitute salmon grilled on the BBQ too; the teriyaki marinated salmon adds to the final flavor blend. ) Place prepared greens in a chilled salad bowl. Break up the chilled leftover salmon and place on top of greens. Arrange fruit, cucumber and sliced scallions on top, sprinkle on sliced almonds and drizzle 2 generous tablespoons of dressing overall.
