Almost-puttanesca creamy pasta

Grape or cherry tomatoes, 1 servingRonzoni, Whole Wheat Penne Rigate, 4 oz Mozzarella Fresca whole milk ricotta, 1.5 servingsSliced California ripe olives, 2 tbspBasil, 1 tbspSalt, 1 dashBlack pepper, 1 dashMushrooms, fresh, .5 cup, piecesCanola oil, 1 tspRed pepper flakes, .5 tsp
1) Toss tomatoes, mushrooms, oil, salt, black pepper, red pepper flakes and half the dried basil. Place in one layer in a roasting pan and place in 300-degree oven for 15-20 minutes.
2) Prepare pasta according to directions. Drain, leaving about 1/4 cup of water in the pan.
3) While pasta is still hot, add ricotta, roasted vegetables, olives and the rest of the basil. Stir to combine and serve warm.
Makes 4 1/2-cup servings.
