1/2 head cauliflower (1 lb raw), steamed and mashed(after steaming the cauliflower, allow to sit in colander and dry out slightly before mashing)1 egg2 oz shredded mozzarella2 tbsp olive oil1/4 cup almond meal
Preheat oven to 450 degrees.
Pour steamed cauliflower in a collander and let it dry out just a bit, and then mash with a potato masher. Mix in egg, oil, almond meal and cheese and stir. Make a pizza crust shape on a non-stick baking sheet or pizza pan a little less than a 1/2 inch thick. Then bake for 10 minutes until crust is a little firmer to the touch and golden.
Remove and add your sauce and/or choice of toppings. Broil in oven until cheese is golden brown and bubbly! Slice and serve!
I suggest using a fork for this pizza; it won't hold up to being held in your hand.
