8 cups diced rhubarb6 cups water1 cup sugar
Simmer rhubarb in water until rhubarb has cooked down and the mixture is smooth. Add half the sugar... keep sauce on a low boil until preferred consistency is reached. Some cornstarch can be added to thicken if needed. Add additional sugar to taste: sometimes more or less sugar is needed to cut the tartness of the rhubarb.
